Should I batch a cocktail ahead of time or make it to order?

Spirit-forward, stirred drinks (Old Fashioned, Manhattan) batch well since they hold up without ice contact. Citrus-forward, shaken drinks (Margarita, Daiquiri) are best batched without the dilution water and shaken to order, or batched with the extra water added upfront and served over ice.
